Citrónový krém - Lemon curd
Ingredience
3 celá vejce
150 g cukru
3 citróny na šťávu
50 g másla
1 celá lžíce čerstvé citrónové kury
Postup
Nejdříve si dejte vařit vodu do hrnce, na vodní lázeň a máslo si rozkrájejte na malé kostičky a nechte v pokojové teplotě připravené na lince. Mezitím si do misky, kterou potom položíte do vodní lázně rozklepněte 3 celá vejce, přisypte cukr a přilejte citrónovou šťávu. Celé to krátce prošlehejte, jen aby se všechny suroviny spojily. Misku dejte do vodní lázně a lehce ruční metličkou šlehejte a šlehejte a šlehejte. Šlehejte tak dlouho dokud nebude krém mít konzistenci holandské omáčky. Nevím jak přesně dlouho to trvalo, ale mě to přišlo jako věčnost. Myslím, že tak cca 10 minut. Až bude krém hotový, tak ho sundejte z vodní lázně a pomalinku k němu přidejte máslo a citrónovou kůru. Znovu prošlehejte a šlehejte tak dlouho dokud se všechny suroviny nespojí (cca 1 minuta). Připravte si nový kastrůlek do kterého krém přesunete. Krém v novém kastrůlku dejte na nejmenší plamen a znovu neustále promíchávejte. Myslím, že tak dalších 10 minut. Krém se vám trochu zredukuje, krásně zežloutne a dostane konzistenci jako řidčí marmeláda, no a v tento okamžik je krém hotový.Pak už jen dejte vychladit do lednice. Pokud budete chtít s krémem opět pracovat, tak stačí dát na chvilku do pokojové teploty a krém za chvilku povolí. Je to trochu zdlouhavý proces, ale věřte mi, že to stojí za to ! Ochutíte s tím spousty piškotů, palačinek, dortů...
